NUTRITION:BASIC FOOD COMPONENTS IN SUMMARY
Six categories of nutrients satisfy the basic body needs: the energy nutrients (carbohydrates, fats, and proteins) and the nonenergy nutrients (vitamins, minerals, and water).
Carbohydrates and fats provide the main sources of energy (kcal) to perform work. Simple carbohydrates found in concentrated sugar provide empty calories to the diet and very little nutrition in terms of key vitamins and minerals. Complex carbohydrates (fruits, vegetables, and grains) are our only source of fiber and a major supplier of long-term energy. Complex carbohydrates are nutritionally dense foods, providing low calories and a high percentage of our daily needs in vitamins and minerals. Both water-insoluble (dietary) and water-soluble fibers provide important health benefits.
Dietary fat is a critical nutrient and a source of high energy for the human body. Fat is classified as saturated, polyunsaturated, or monounsaturated. Cholesterol, a type of fat, is found in animal sources and also manufactured by the human liver.
Protein can be obtained from both animal and plant foods. In the human body, protein is used for the repair, rebuilding, and replacement of cells; growth; fluid, salt, acid-base balance; and energy in the absence of sufficient dietary carbohydrate and fat. Protein from meat, eggs, and dairy products is termed complete since it contains all the essential amino acids in the correct proportion. The correct combinations of various vegetables and grains also make up complete protein sources. With proper planning, vegetarians can easily obtain sufficient protein in their diets without consuming meat, eggs, or dairy products.
Vitamins help chemical reactions take place in the body and are needed in only small amounts. A balanced diet provides the necessary vitamins and minerals needed daily for most people.
Minerals are present in all living cells and serve as components of hormones, enzymes, and other substances aiding chemical reactions in cells. Macro-minerals are needed in large amounts, whereas 14 trace minerals are required in small quantities for optimum health. Your daily mineral needs can also be obtained through a balanced diet.
Although it has no nutritional value, water is necessary for all energy production, temperature control, and elimination. A minimum of six to eight glasses of water should be consumed daily, exclusive of all other beverages.
